Wild Canadian Smoked Salmon Candy with Pepper

West Coast salmon candy has always been about the balance between sweet and smoke. This version adds a third note. We smoke wild Canadian salmon in small batches, glaze it lightly with maple, then finish each piece with cracked black pepper. It is sticky enough to feel like a treat but savoury enough to sit on a cheese board.

What it tastes like

Caramelized maple up front, a smoky middle and a warm pepper finish that lingers. Chewy at the edges, tender in the centre.

Our frozen salmon is delivered across the Lower Mainland, packed in half-pound portions. Delivery is free on orders over $150 and $14.95 otherwise. Put the packs in the freezer when they arrive and thaw one at a time in the fridge.
